In a craft beer world, where various incarnations of IPAs rule, a neighbourhood brewery in Toronto’s Corso Italia has left super hopped, bitter beers to others. Here, at True History Brewing on St. Clair Avenue West, it’s all about lagers (and maybe a wheat beer).
Located in what was once a neighbourhood cinema, then a pizzeria, new-ish True History owes its passion for lagers to co-owners Matt Tompkins and Adam Shires. There are more variations of lagers for brewers to explore than there are IPAs, which play in three or four spheres, trying different hops combinations, said Tompkins.
