Chicken Salad Chick is expanding into a major Midwestern market.

The fast-casual chicken salad restaurant will open 10 new restaurants in the Minneapolis area through a franchise deal with the Coffey family – a well-known family of basketball players who hail from Minnesota.

Target development markets for the new stores include Hennepin and Ramsey County. Currently, Chicken Salad Chick is slated to open its first Minnesota restaurant in Lakeville later this year.

The Coffey family – Richard and Sheba, and their children Sydney, Nia and Amir – have each contributed to state championship teams and received national accolades.
