Iwish more people would start smoking. I don't mean cigarette smoking . I mean grill smoking. Charcoal grills are revered for how they make food taste. Gas grills are loved for their ease. Pizza ovens are all the rage these days—so much so that we've pitted the top brands head-to-head . But for some reason, people I talk to are intimidated by the idea of smoking their meat.

Maybe it's because barbecue is such a sacred cooking style in America. From vinegary Alabama and North Carolina varieties to sweet Kansas City flavors to the beef-centric West and all the shit going on in various parts of Texas, BBQing can scare people off.
