WATERTOWN, New York (WWNY) - Chef Manning shows us how to make Jamaican Jerk Chicken with hot maple syrup.

For the Rub

1 tbsp granulated garlic

2 tsp granulated onion

2 tsp cayenne pepper

2 tsp whole leaf thyme

2 tsp dried parsley (flakes)

2 tsp sugar

2 tsp salt

1 tsp paprika

1tsp allspice

1 tsp crushed red pepper

1 tsp ground black pepper

½ tsp ground nutmeg

½ tsp ground cinnamon

Mix all of the ingredients together and use to season chicken or pork.

For the Wet Marinade

1 medium lemon, diced

1 large jalapeno diced

2 cloves of garlic minced

1 green onion chopped

Juice of half a lemon

1 tsp minced ginger root

2 tsp cider vinegar

2 tsp dark soy sauce
