In the first few months of President Trump’s second administration, tariffs—considered a tax by many economists because higher prices get passed on to the consumer—have made the news quite a bit. While President Trump’s tariff policies dominate headlines, another tariff-like tax has quietly sent egg prices soaring: California’s Proposition 12.

Prop 12 was a ballot measure that prohibits the sale of regular, conventionally produced eggs in the state, only allowing the sale of Whole Foods-style eggs such as “cage-free.” This has created a big scramble in the nation’s egg market.

California was once ranked among the top five egg-producing states. But over the years, the cost of doing business in California has driven egg farming out of the state to places like Pennsylvania.
