Our first encounter with these tasty wraps was in an assortment of local roadhouses in the ’80s. The sizzling cast iron platters with mounds of chicken or beef were a hit. The wide assortment of accompaniments and the warm tortillas helped make the perfect meal.

We quickly learned to make them at home and, during the years, there have been so many renditions..

This week I’m presenting a vegetarian version that can be prepared on a sheet pan or baking sheet.
