Jack Richard Sobel, chef and proprietor of Agave Restaurant , was so enthusiastic about sharing this recipe that he sent us an illustrated version with pictures of the recipe at every stage so we could accurately describe it for readers. The cakes are sometimes called “three pepper and roasted tomato” cakes on the menu, a reference to the serrano, cayenne and black peppers in the seasonings.
