Boucherie chef/owner Nathanial Zimet made a surprise move earlier this year by closing his Carrollton restaurant for June and July. It was part of a tactic to avoid the losses many local restaurants endure in the slow summer , and one that others have contemplated. The chef determined he could do it because he had other projects to keep his staff working.

One of those projects, it turns out, will soon result in a different version of Boucherie from the restaurant New Orleans has known for 17 years.

Boucherie will reopen from its summer hiatus this Friday, Aug. 8, to serve its Coolinary menu , part of the citywide summer dining promotion of prix fixe dining deals running through the end of August.

After Coolinary, Boucherie will close for a week in early September to polish off
