When life gives you peppers, have a party.

Prime time tailgate season convenes with the late summer hot pepper harvest, offering abundant delights perfect for the occasion. Lucky for me, a generous neighbor offered up his rainbow of jalapenos and other tantalizing varieties that might make you reach for the milk.

This is my kind of canvas.

For the popular popper, I recommend sticking with the comparatively humble jalapeno. I once devoured a couple of cheese-stuffed habanero poppers, and my mouth still burns from the memory. I focus less on the cheese and add in creamy roasted sweet potato, seasoned simply with a handful of chopped green onion and a good sprinkle of smoked salt.

Fold in some sharp cheddar and stuff the little halved jalapeno boats with the mixture before baking or grill
