With Danish Days this weekend and our gardens in full swing, it’s cucumber time!
And, kudus to the Danes, agurkesalat (ah-GOOR-keh-sah-laht), a tasty Danish cucumber dill salad is just right side for end-of -summer barbecues.
Not exactly a pickle in the traditional sense, but more than a salad, agurkesalat is a tasty, tangy combination that easily goes with any summer meal, Danish or not.
To be honest there are several versions, all good, but this week’s recipe is my favorite. A light, “quick” pickle, sweet/sour with dill essence and a refreshing clean aftertaste.
You can tell I’m a fan.
I particularly like the inclusion of dill, however, if it doesn’t appeal to your taste, it can be omitted … though I do recommend using it.
As a rule, taking only a few minutes preparation and a mari
