AIKEN, S.C. (WJBF) - The Aiken community is remembering a man many called "Jimmy the Greek." Variety Restaurant owner Jimmy Varos died Friday, Sept. 19, 2025.

Varos' family said he was more than a restaurant owner – he was a role model who gave back to the community in countless ways.

“This is truly the man here because he loved the sea," said Angela Eckhart, Varos' sister-in-law. "He had boats. He went fishing, deep sea fishing. My God, what didn't he do?"

He came to the U.S. with $50 dollars in his pocket after serving in the Greek navy and traveling the world. He built his restaurant from the ground up and became a fixture in the community.

"Just kindhearted. Loved everyone. Would physically give the shirt off his back," said Elaine Varos', his daughter.
