250ml dry red wine

750ml chicken stock

1 tsp smoked paprika

1 tsp grape molasses

25g butter, cubed

Crispy Chicken Skin

500g chicken skin pieces

2 tsp Cajun seasoning

Celeriac Purée

1 tbs olive oil

1 large celeriac, peeled, chopped

1 white onion, chopped

200ml thickened cream

125ml vegetable stock

Salsa Verde

1 long green chilli, chopped

1 tbs baby capers

1 tbs dijon mustard

1 tbs red wine vinegar

1 cup basil
