BRIM, a Minneapolis restaurant focused on organic, farm-to-table dining, will add a second Twin Cities location this week.
The new BRIM will open Thursday in Edina, in the former Red Pepper restaurant at 2910 W. 66th St.
The lunch menu features brunch, powered by organic and locally-raised eggs, and a range of sandwiches and toasts - all made with gluten-free breads baked in Minneapolis.
Bowls, each gluten-free and without seed oils, are the focus of the dinner menu, with ingredients such as Red Lake Nation wild rice, seared Norwegian salmon and grass-fed beef.
There's also a range of salads, soups and even bone broths.
BRIM's original location in Uptown, which opened in 2018, overlooks Bde Maka Ska in the same building as the 1800 Lake apartments.
