The enormity of the word ‘iconic’ isn’t lost on Jeremy Hayton.

As the head chef of both Pepino’s Spaghetti House and Caffè La Tana in Vancouver, Hayton has been charged with helping to keep the legacy at the storied location that was once home to Nick’s Spaghetti House alive.

“To be in a place like this that, you know, the word iconic gets thrown around a lot. It’s an honour to carry on that legacy,” says Hayton. “And try to not only carry it on — but build on it and keep growing.”

Hayton says they have people come into the restaurant, almost weekly, sharing memories of their time when it was still Nick’s.

“They say they came here as a kid, or like their grandma used to work here, or things like that,” he says. “That’s just a really special thing that it has kind of ingrained itsel
