Champagne Risotto with Scallops and Fennel Puree

Ingredients Scallops: • 8 fresh scallops • 2 tbsp olive oil


Ingredients Risotto: • 375g arborio rice • 1 stick celery • 2 shallots (or 1 small onion) • 10g dried porcini mushrooms • 2 cups Champagne (or sparkling wine) • 4 cups vegetable stock • 50g parmesan cheese (grated) • 50g butter • 4 tbsp olive oil • Salt • Pepper

Ingredients Fennel Puree: • 2 bulbs fennel, cut into julienne • 1 onion, sliced • 1 500ml
 • 1/2 cup liquid honey • 4 cups spinach leaves • Salt • Pepper
