Oyster shells collected from the Chefs Brigade ‘s recent greater New Orleans Oyster Night are being repurposed to help rebuild Louisiana’s coast, organizers announced.

Nearly five tons of oyster shells from the September 18 event have been recovered by the Coalition to Restore Coastal Louisiana (CRCL), a nonprofit that leads the state’s Oyster Shell Recycling Program.

The collection includes about 2,000 pounds of shells from Grand Isle Jewels, a boutique off-bottom oyster brand that debuted at the event.
