LAS VEGAS (KLAS) —It was a leap of faith when Sarah Morgen-Fox decided to open franchise restaurant Effin Egg in Las Vegas.
"It was never something I expected, it wasn't something I had planned by any means. I dropped out of nursing school and I started doing this," she said. "My husband's response was, 'nursing school will always be there, this won't.'"
Morgen-Fox is a U.S. Army medic, and combined with the restaurant, she told 8 News Now that work-life balance has been tough at times.
"Until I opened this location, I had not taken a sick day, a leave day since 2018. So the unit I'm with right now I do a lot of outside work," she explained. " I am in charge of all of our fitness training, all of our height and weight. So I do a lot of stuff outside the unit and the first two years I wa
