Ingredients

Steak

2 tsp oyster sauce 2 garlic cloves, crushed 2 tsp fish sauce 800g scotch fillet, at room temperature

Crispy garlic chilli oil

125ml vegetable oil 8 garlic cloves, crushed 3 tbs dried chilli flakes

2 tbs caster sugar 2 tsp salt 1 tbs MSG

2 tbs vegetable oil 4 eggs, lightly beaten 1kg fresh rice noodles

4 tbs sweet soy sauce

3 tbs oyster sauce 3 tbs soy sauce

2 bunches Chinese broccoli, chopped

Method

To prepare the steak, combine the oyster sauce, garlic and fish sauce in a small bowl. Pour over steak and rub into meat. Season with pepper. Set aside at room temperature for 30 mins to marinate.

To make crispy garlic chilli oil, heat oil in a small saucepan over low heat. Add garlic and chilli. Cook 1 min or until golden. Remove garlic and chilli. Sti
