Potlucks pop up often this time of year, and they're often overflowing with rich, heavy casseroles. There are other options, however.
The word “potluck” means “luck of the pot.” In 16th-century England, the term referred to any meal that happened to be cooking in the pot on that day. By the mid-1960s, potlucks were standard for gatherings at work, school events or in the neighborhood. These days, potlucks can be a chance to impress guests with healthful eating options.
