In the summer of 2017, chef Rose Previte left Washington for five weeks. With her business partner and a handful of friends and employees in tow, she set out to cook and eat her way through Morocco, Tunisia, Turkey, Georgia and Lebanon. This is how she pieced together Maydan’s first menu.
