CAIRO, Ill. (KFVS) - The Rise Community Market in Cairo, Illinois, is taking a step forward--officially bringing meat sales back for the first time since transitioning from a full co-op to a deli-only operation.
“I am very excited. This is phase two for us. It’s been a journey coming from having a full-scale co-op to just having the deli,” said Vice Chair Steven Tarver. “We’ve been aspiring to go to this next level, so today is the first day of actually being able to offer meats. So I’m very excited to see how this will actually start to grow so that we can go to the next level and open back up our co-op again.”
Tarver said this marks phase two of their long-term effort to revitalize the market.
He said a team of volunteers came in early Tuesday morning to package the meat, and he hopes
