All recipes serve two: double ingredients to serve four

Halloumi tikka masala with rice

225g halloumi

1 red onion

2 cloves garlic

20g fresh ginger

1 green chilli

30g unsalted butter

1tsp cumin seeds

2tbsp tomato purée

150ml double cream

tbsp honey

1tsp garam masala

250g microwave

white rice

100g frozen peas

10g fresh coriander

Fill a kettle and bring it to boil – this will be used for the halloumi.

Chop 225g halloumi into 2cm chunks. Peel, halve, and dice one red onion. Peel and finely chop two cloves of garlic and 20g of ginger. Finely chop one green chilli and 10g of coriander.

Heat 2tbsp vegetable oil in a large frying pan o ver a medium-high heat.
