Geddes, N.Y. — Somewhere behind that fogged-up glass cooler at the New York State Fairgrounds, a secret’s been chilling for 11 days. This morning, sculptors Jim Victor and Marie Pelton finally cracked open the door and let us all in on it.

Out rolled the 2025 New York State Fair butter sculpture, 800 pounds of creamy creativity carved into “Dairy For Good: Nourish. Grow. Thrive.”

This unsalted work of art is the equivalent to 3,200 sticks of butter, enough to cover 76,800 pancakes.

For nearly two weeks, the duo bundled up in 45-degree air, coaxing bulk butter from O-AT-KA Milk Products in Batavia into a life-sized scene that’s part art project, part dairy love letter.
