Sometimes, I get into a rut and eat the same things over and over. Sometimes, it’s because I am busy and my brain just grabs the familiar to put dinner on the table. And other times, there is just more of the same produce at the farmer’s market or the grocery store. It is hard to be creative when even farms are in a rut! But all of us need to try new recipes to keep life interesting. Here are some ideas.
Lemon Chicken is a light dish that works well in summer, and it's full of bright flavors. It is easy to make and rewarms well, if you wind up with leftovers. It is also versatile. I usually make it with chicken thighs, because I find them tastier and juicier than chicken breasts. But if you prefer chicken breast, use this same recipe and you will still be happy.
