Bread “sommeliers” are the latest gastro boffins. Accredited bakery craft academies are offering a training course to become a bread sommelier.
Around 300 have so far earned the certification globally, according to trade journal Bakery & Snacks. It involves having an extensive knowledge of all areas of bread, including its history, culture, types and styles, grains, milling, production, nutritional values, flavour profiles and sensory appreciation of bread.
