BRADENTON, Fla. — This week's Chef’s Kitchen happens in Bradenton off Cortez Road at Five Nine Grill & Tavern . Executive Chef Mike Degirolamo has been working in the restaurant business for decades. He takes all his know-how and puts in the sauté pan.

The focus is family and comfort food and nothing says that like Quick Jambalaya.

“No loss of any flavor. We sell a lot of these. People love it," explained Degirolamo.

Quick Jambalaya (“About 15 minutes, if you’re good,” according to Degirolamo.) • 2 tablespoons garlic butter • 6 raw shrimp tail off • 2 tablespoons Cajun seasoning • 3 oz smoked sausage • 4 oz blackened chicken • 6 oz chicken stock • 2 oz red onion • 2 oz red peppers • 3 oz okra • 8 oz rice

Making it • Melt garlic butter in a saucepan. • Add shrimp
