TYLER, Texas — The East Texas State Fair saw a major addition in 2025 with the launch of a PRCA-sanctioned rodeo. But while the rodeo was new, many visitors said food remains the centerpiece of the fair experience.

Traditional favorites like corn dogs and nachos were once again popular, but several vendors offered twists on classic fair food. Casey’s BBQ introduced a loaded avocado, and one vendor drew attention with an elephant ear called The Promised Land, topped with cinnamon, sugar, honey, and cream cheese.

“It’s really good — ten out of ten,” fairgoer Nicholas White said. “Best non-fried food at the fair.”
