What’s it like preparing food for 68,500 fans attending a Niners game at Levi’s Stadium on a Sunday?

“It’s organized chaos!” said Alvin Kabiling, who oversees the stadium’s culinary department.

As Levi’s executive chef, Kabiling is responsible for all forms of dining during athletic events. That includes premium areas such as clubs and suites, restaurants and even concessions. Over 60 cooks are employed and many staff members.

“I look forward to all of it,” Kabiling said of the football season that’s currently underway. “We want to impress the fans and everybody.”

This year, Kabiling said, he wanted to focus on concessions, which sell food separate from restaurants.
