Kitchener-Waterloo Oktoberfest is spicing up its menu with an all-new mustard from a local company with aspirations of international growth.

Jaret Flannigan, head of recipe development for The Great Canadian Sauce Company (TGSC Co.), created the festival’s official mustard in his home kitchen. The new flavour is a spicier and zestier take on the traditional Bavarian condiment that had been made for decades by Schneider’s until it was discontinued in 2020.

“It’s been a true partnership with the Oktoberfest folks … there has been a lot of back-and-forth since Version One,” said Flannigan, a veteran of the local culinary scene who spent 14 years working for the Charcoal Group.
