WATERTOWN, New York (WWNY) - Chef Manning shows us how to make Cajun Hush Puppies and Fry Sauce.

Cajun Hush Puppies

½ cup all-purpose flour

½ cup yellow cornmeal

½ tsp. salt

¼ tsp. baking soda

½ tsp. freshly ground pepper

1 large egg

½ cup buttermilk

1 cup minced onion

2 cups vegetable oil

1 4 oz link andouille sausage, minced

2 green onions, minced

Combine the first 5 ingredients in a bowl. Make a well in the center of the mixture. Stir together egg and buttermilk. Add mixture to dry ingredients. Stir until moistened. Stir in the sausage and the onion. Pour oil into a 10-inch cast-iron skillet, and heat to 375°F. Drop batter by tablespoonfuls into oil, and fry in batches 3 minutes on each side or until golden. Drain on paper towels. Serve immediately.

1 cup mayonn
