Ihad the good fortune to travel to Portugal and the Basque region of northern Spain this year.

A wide variety of seafood and rice are common ingredients to recipes in both of these destinations. In many parts of Spain, paella is a much-loved rice dish.

I’ve also enjoyed renditions of seafood and rice that present more like a soup or very loose risotto.

Below is my version of a seafood-rice dish that I enjoyed. While I have kept the seafood options simple in the following recipe by using cod and shrimp, you can expand the seafood to include ingredients such as mussels.

The beauty of this dish is that you can use frozen cod and shrimp. I always have these items in my freezer and they can thaw quickly.
