A gourmet toast and juice bar founded by a college student in Washington, D.C., is making its way to San Jose.

Toastique is taking over the former Starbucks location at San Pedro Square that fronts Santa Clara Street. The opening could be as soon as this fall.

Toastique was started in 2018 by former Division I cheerleader Brianna Keefe, who had fine-tuned her own avocado toast while at James Madison University. When her flagship location in Washington, D.C., generated more than $1 million in sales during its first year in business, Keefe launched a franchising model.

Within four years, she was named to Forbes’ 30 under 30 list. Toastique now boasts dozens of franchise locations — and counting — in 18 states and D.C.
