Steven Smith-Hay is the co-founder and managing director of Edinburgh-based craft brewery Vault City.

Starting off by brewing 40-litre batches in his kitchen during 2018, he’s grown the start-up into the UK’s largest sour beer producer, now turning over around £7m per year.

Known for bold flavours, Vault City uses about 200,000 kg of real fruit each year and has brewed more than 400 different beers sold in more than 20 countries.

With a growing core range, supermarket releases, celebrity collaborations and a four-day work week with no loss of pay, Smith-Hay is positive about the future.
