Ingredients
600g eye fillet, thinly sliced
4 eggs, whisked
1 small red onion, thinly sliced
1 carrot, thinly sliced
1 red chilli, thinly sliced
Steamed jasmine rice, to serve
Sliced spring onion and toasted sesame seeds, to garnish
Marinade
1 red apple, grated
½ small brown onion, grated
Method
To make marinade, place all ingredients in a large bowl. Add beef and stir to combine. Season with ground white pepper. Refrigerate, covered, for 1 hour or up to overnight.
To make egg nets, place whisked eggs in a squeezy bottle.
Heat a large lightly oiled frying pan over medium heat. Squeeze egg mixture in a zig-zag motion to create a thin net. Cook until set. Repeat with remaining egg. Set aside.
