In a large skillet over medium heat add the Italian sausage meat, break the meat into small pieces with a spatula as it cooks. Cook until browned and no longer pink about 8-10 minutes. Remove the sausage from the skillet and set aside.
In the same skillet, add the butter and the diced onion. Saute’ until the onion becomes translucent about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant. Pour in the chicken broth and bring to a simmer, add the heavy cream, bring the mixture back to a simmer.
