It’s here, amid the memories of the property’s past lives as a retreat for Catholic priests and later a health spa, I found Brew and its famous Maple Beer.

Brew isn’t new, but its woodland location and business synergies make it a brewery that’s pivoted enormously.

It started in Windsor in 2014 as the city’s first microbrewery in an old chocolate factory. An early hook at its bottle shop was beer in flip-top blue glass bottles.

The pivot happened in 2019 — rough timing with that pandemic — when a 12-hectare rural property became available 20 minutes south of Windsor. The reimagined business married beer, wine and a wedding and event venue.
