Ingredients

Sliced red chilli, to garnish

Soba noodles

300g buckwheat flour

75g plain flour

180ml water

Cornflour, to dust

Smashed cucumber salad

3 tsp rice vinegar

2 tsp light soy sauce

1 tsp sesame oil

1 tsp mirin

1 tsp ginger paste

¼ tsp white sesame seeds, toasted

¼ tsp black sesame seeds, toasted

2 large Lebanese cucumbers, quartered

Miso glazed salmon

4 tbs miso paste 50ml soy sauce 2 tbs brown sugar 2 tbs rice vinegar 2 tsp sesame oil

4 x 200g salmon fillets, skin on

Method

To make noodles, sift flours onto a clean work bench. Make a well in the centre. Gradually incorporate water, to form a soft pliable dough.

Knead dough on a lightly floured bench for about 5 minutes or until smooth and elastic (it will lose its rough, floury texture). Divide into quarters. Pa
