Party Season Oysters

What’s better to bring to the table during the festive season than a plate of freshly shucked Albany rock oysters? Here are five of my favourite garnishes. Simple, bright, and guaranteed to impress. Each one is easy to prepare and elevates your oysters without overpowering them.

Each dressing will make enough for a dozen oysters.

Toasted Pepper Mignonette

Sometimes simple is best. This is my personal favourite. The trick is using the nicest red wine vinegar you can find.

Ingredients

1 shallot, finely diced 100ml best-quality red wine vinegar

3 fresh cracks of lightly toasted black pepper + See Tip 1

Method

Step 1 Combine the shallot, vinegar and toasted pepper. Spoon over freshly shucked oysters just before serving.
