The full menu for Glynn Purnell's new restaurant Trillium has been revealed as it opens to diners this afternoon (Wednesday, December 10). Michelin-starred chef Purnell and Loki Wines boss Phil Innes have joined together to open the new city centre restaurant.

Trillium will serve up its 'bold, seasonal cuisine' and carefully-curated wine list on Snow Hill Queensway near Colmore Row , where North Brewery was. Esteemed chef Rob Palmer, of former Michelin Star restaurant Peel's at Hampton Manor, has been revealed as Trillium's head chef with British Chefs Federation Young Chef of the Year 2024 finalist Andrew Kay taking the sous chef role.
