Though I love the traditional Jewish foods that our ancestors have enjoyed for many years, I often like to mix up things and use new, less traditional or unexpected ingredients to modernize our holiday favorites.

I decided on an easy appetizer that can feed many and that can be prepared ahead of time and baked right before company arrives. I liked an Asian-themed main dish and latke for something unique and a twist on typical latkes. I tried to combine both traditional foods and in season fruit for a delicious Chanukah dessert.

Asian Vegetable Latkes

INGREDIENTS

Latkes

• 3 cups shredded vegetables (I used cabbage, carrots and zucchini)

• ¼ cup sliced scallions (about one bunch, dark green part only)

• ¼ cup furikake

• 1 teaspoon garlic powder

• Neutral oil (i.e. canola, vegetable)
