This traditional beekeeper’s rhyme is meant to remind folks that honey harvesting, like every other harvest, has a good time and a not-so-good time. Why is July too late? The larvae begins to hatch and can spoil the honey.
Luckily for us, there are plenty of great West Virginia beekeepers who know just when to harvest the honey from their hives. These local folks are doing a great job of providing customers at the West Virginia Marketplace and Purple Onion with sweet-tasting honey for our tables.
