Geddes, N.Y. — The New York State Fair is where creativity meets calories, and no one works that angle harder than Nick Sanford.

The owner of Toss & Fire Wood-Fired Pizza has been cranking out wild, fair-only creations for nine years. Now he does it from his big stand in the back of Chevy Court. Each summer, he throws a handful of new pizzas into the wood-fired oven, brings back a few fan favorites, and sees what sticks. This year’s lineup? Eight exclusives, including one collaboration that stole the show at Tuesday’s preview.

That scene was a familiar one: Sanford unveiling his fair menu to a hungry group of Central New York foodies, the scent of garlic and wood smoke in the air. By the end, there was one clear favorite, and it wasn’t even close.
