Big Swerve — all 6-foot-3, 315 pounds of him — sidesteps around the “quints,” his name for the five massive Oklahoma Joe grills that surround his gargantuan 500-gallon smoker, nicknamed Big Bottom Betty, inside a modified shipping container.
Not long ago, Big Swerve (real name Stephen Clark) weighed 400 pounds, but lost all that weight the easy way — working in 110-degree temperatures inside that tented shipping container, which his wife, Shajuan, bought online.
