RHINEBECK, N.Y. – At this year’s Dutchess County Fair, Lumberjack’s Arctic Treats features two concepts that would not seem to belong together.

First, there is no lumber to be obtained from the artic. Vendor Jason Johnson, a first-year participant with the fair, acknowledges the name comes from his tree-cutting service in Georgia, using an existing white tent that was designed for that business.

Second, the idea of freeze-drying something like ice cream is counterintuitive because it takes the chill out of what is traditionally the coldest snack of the summer.

“It’s the same product,” Johnson said. “The only difference with the freeze-dried is that the water content is now extracted from it. So, it’s a good snack for a ball game or a hike.”
