STATEN ISLAND, N.Y. — A new player is entering Staten Island’s uber-competitive cookie market as Insomnia Cookies prepares to open at 424 Forest Ave. in West Brighton. The company is currently seeking workers and managers, with job applications available online , though an opening date has not been announced.

The chain, which began in 2003 as a college dorm room venture at the University of Pennsylvania, has grown from humble beginnings to become a major presence in the late-night dessert industry. Founder Seth Berkowitz started the business after identifying a gap in late-night food delivery options, particularly for warm cookies.
