Alleged victims of a former Broome pub manager accused of sexual assault have told a court of his alleged predatory behaviour.

Stewart Patrick Burchell, 51, is accused of sexually assaulting five staff and a patron while managing the Roebuck Bay Hotel in Broome, 2,000 kilometres north of Perth, between 2017 and 2023.

Mr Burchell has pleaded not guilty to the charges against him.

On Wednesday, his defence lawyer accused the two women testifying against him of fabricating their claims.

The first complainant to testify told Broome District Court she was in her early 20s when Mr Burchell pulled her triangle bikini down, exposing her breasts, at the hotel on a Thursday night in January 2020.
