ELLISTON, Va. (WFXR) -- Deer season is underway in Virginia, but before you hit the fields or woods, you might want to give some thought about what you will do with your harvest. Lining up a game processor would be a good idea.
There are dozens of processors in the SW Virginia region. Most accept field-dressed deer and then skin them and process them into various cuts of venison.
"The standard is roasts, steaks, tenderloin, and burger," said Tony Graves, owner of Hunters Burden, a meat processor in Elliston. "We do a lot of specialty items if you want that. One of our most popular specialty items is our summer sausage."
