M aria and Matthew Outtaphone decided to leave Texas to build a better life for themselves and their keiki on Oahu. The husband-and-wife duo are the owners/operators of the Mad Fruits food truck, which they named after their son, Maddox, and daughter Madelyn.

Matthew’s family operates a 10-acre farm that’s part of the Turtle Bay/Pono Pacific Agriculture Lands, and his parents own a fruit stand at Kuilima Farm.

“Moving here was the goal, creating Mad Fruits at the time was not,” Matthew says. “However after being involved with the family farm, we quickly learned the operations and decided to create an avenue for ourselves that we could one day pass on to our children.”
