Tortellini with Sausage and Spinach

1 lb (454 g) sausage meat

1 small onion diced

2 tbsp (30 mL) butter

2 cloves garlic minced

1 cup (250 mL) heavy cream

1 cup (250 mL) chicken broth

1 lb (454 g) fresh or frozen cheese tortellini

4 cups (1,000 mL) fresh spinach leaves

1/2 cup (125 mL) grated Parmigiano-Reggiano cheese

Salt and pepper

1 tsp (5 mL) red pepper flakes (optional)

In a large skillet over medium heat add the Italian sausage meat, break the meat into small pieces with a spatula as it cooks. Cook until browned and no longer pink
