SOUTH BEND, Ind. (WNDU) - Notre Dame Stadium chefs are preparing to feed 80,000 fans when Navy visits for another sold-out home game this weekend.
Chef Javier Rosa leads the culinary operation that goes beyond traditional stadium fare of hot dogs and popcorn. He brings Puerto Rican flavors to the stadium’s food offerings.
The preparation process begins months before each game. Rosa works with partners from Levy to conduct tastings and finalize menu options.
“We first do tastings with our partners from Levy to make sure we provide for the customer what they love,” he said.
The team produces around 350-400 sandwiches per game and 500 nachos, along with 10,000 hot dogs. Rosa brings about 25 chefs from different locations who arrive on Monday before each game.
